Structured vs unstructured
What buckram and a brim insert actually do, how each type ages, and which one you want.

Structured and unstructured describe what is inside the front of a cap, and the difference changes almost everything about how a hat looks, sits, and ages.
What structure is
A structured cap has a stiffened interlining, usually buckram, fused behind the front panels. Buckram is a woven fabric treated with a stiffening agent, and it is what makes the front of a cap stand up on its own rather than folding forward.
An unstructured cap has no interlining. The front panels are just fabric, so the crown collapses when the hat is off and takes the shape of your head when it is on. Most dad caps are unstructured.
The brim insert
Separate from the crown, and often confused with it. Every curved brim has a panel inside it holding the shape.
Cheap caps use cardboard or thin plastic. Cardboard fails the first time the hat gets wet. Better caps use HDPE, a rigid polyethylene, in thicknesses usually between 1.2mm and 3mm. Thicker means the brim holds its curve harder and resists taking a set from being packed or sat on.
A cap can be unstructured in the crown and still have a rigid brim. The two are independent decisions.

Neither is better in the abstract. They fail in opposite directions. A structured cap that has been crushed looks broken. An unstructured cap that has relaxed looks worn in, which some people want and some do not.
Which one you want
Choose unstructured if you pack hats, want a soft casual silhouette, and are fine with the hat looking different in a year than it does today.
Choose structured if you want the hat to look the same in year three as in month one, and you are willing to store it properly.
